TROLLEY'D ROAST WATTLE, CACAO & LOCAL HONEY COCKTAIL SYRUP

Infuse your cocktails with the essence of Australia using our Roast Wattle, Cacao & Redgum Honey Syrup, made from the finest native ingredients. Before you begin, ensure you have sterilised bottles ready for storing your homemade syrup, ensuring longevity and flavour preservation.

Ingredients:

  • 1 Tbsp Roasted Wattle Seeds
  • 1 Tbsp Cacao (Our convenient cocktail kits combine these ingredients into a ready-to-use pre-mix packet. For more details on our kits, click HERE.)
  • 60g Redgum Honey (or a vegan honey alternative)
  • 500ml Filtered Water

Method:

Step 1: Gently toast the wattle seeds and cacao in a dry pan, taking care to avoid burning. Once aromatic, remove from heat and set aside.

Step 2: In a heavy-based saucepan, combine the honey and water. Bring to a boil, then lower the heat to maintain a simmer. Stir in the toasted wattle and cacao blend. Simmer for 25-30 minutes, or until the mixture has reduced by about half, concentrating the flavours.

Step 3: Once the syrup has reduced, remove the pan from heat. Allow the mixture to cool, then strain it through a fine-mesh sieve into your sterilized bottle. Stored in the refrigerator, your syrup will retain its flavours for a few weeks.

Additional Step for the Enthusiastic: For an extra touch, dehydrate the marc (the residue of honey-soaked seeds and nibs) in an oven overnight. Subsequently, infuse this dehydrated marc into alcohol of your choice to extract every bit of flavor. Dry it out once more, then blitz it into a fine powder to create an aromatic garnish for your drinks.
