The drink was the story.

The Maneland Spritz was built on a Trolley’d house-made Illawarra plum and riberry summer wine, fermented in our own production. The fruit came from a quiet but significant supply line: our crew foraged riberries and Illawarra plums on the streets of Sydney. Both are native species, hiding in plain sight on Australian pavements, and both bring flavours you cannot replicate from imported syrups.

On the line, the recipe was finished with Prosecco supplied by Maneland and topped with a sparkling lemon myrtle tisane built in-house. It was a lighter, brighter native top note that carried the drink across a long day of service.

Service was poured into whitewall compostable cups, photographed cleanly under VIP lighting and engineered for content as much as for the palate. What remains from production goes back into our compost loop.
