Trolley’d is joining the inaugural Kangaroo Valley Citrus Fest for a hands-on evening built around fresh local citrus, whole-fruit preparation and regional spirits from Old Salt Distillery.

The $120 ticket, plus the Humanitix booking fee, covers a two-and-a-half-hour hosted session focused on practical technique, regional provenance and repeatable preparation. Guests make citrus syrup, prepare two cocktails with Old Salt Distillery spirits and leave with a bottle of syrup and recipes.

Whole-fruit preparation

A lemon should not have one job.

A lemon is often squeezed once and discarded. Whole-fruit preparation creates more flavour and more value from the same seasonal produce.

The workshop considers how juice, peel, zest and remaining fruit can each contribute to a drink or later preparation before the fruit leaves the kitchen or bar.

The guest journey

From local citrus to a repeatable drink.

The session gives guests a useful method they can repeat, with equal attention given to technique, flavour and the provenance of the ingredients.

  1. Arrive for a short introduction to the fruit, spirits and workshop structure.
  2. Prepare citrus syrup from fresh local fruit.
  3. Learn the mixing techniques that control dilution, temperature and balance.
  4. Make two cocktails using spirits from Old Salt Distillery.
  5. Taste the drinks while discussing citrus, provenance and preparation.
  6. Leave with a bottle of syrup and recipes to continue at home.

Place, produce and community

The fruit is not decoration. It is the point.

Kangaroo Valley’s citrus trees carry the central story of this workshop. Seasonal produce becomes more valuable when people understand how to use it carefully, preserve it properly and keep more of its flavour in circulation.
